I made these Rainbow Cookies for a Cookie Swap. They are my favorite kind of cookie. The traditional Italian color scheme is pink, natural, green, however you can change up the colors to be whatever you'd like. The fluffy layers of almond cake paired with apricot and raspberry jam and covered in sweet chocolate make this one a yummy treat!
